2. Rinse the rice noodles with clean water; make chili paste by roasting dry chili until crispy and mashing it into paste; pickle sour lotus root, take it out of the pickle jar, cut it into small pieces and put it in a small dish as a side dish; cut the sour cabbage into 1.5-2 cm long pieces; cut the coriander into pieces about 8 mm long;

3. When eating, follow the following steps: Boil rice noodles (there are sour noodles and fine noodles, usually a bowl of beef noodles is about 150g-200g) in boiling water, scoop into a soup bowl, put beef slices (25g) on ​​the rice noodles, cover with stewed diced beef (25g) or diced beef tendon, add appropriate amount of sauerkraut, add a little butter, finally pour the boiling original soup on it and sprinkle with coriander sections.
