5. Seasoning :

8 grams each of green onion, ginger, salt, pepper, and sugar, 10 grams each of olive oil, scallion oil, lard, and cooking wine, 3 grams each of chili powder and cumin powder, and 100 grams of Japanese barbecue sauce.

6. Production method:

(1) Clean the fresh mackerel, slice it open from head to tail, and spread it into two pieces. Spread scallions, ginger, cooking wine, sugar, olive oil, salt, pepper, chili powder, and cumin powder on the fish and let it sit for 20 minutes.

(2) Soak the dumplings in the sauce and place in the refrigerator for 4 hours. Take them out and place them in a well-ventilated place to dry (you can use a fan to blow them dry) for about two days.

(3) Bake the dried Spanish mackerel on a dough stove (preheat the oven to 275°C. Bake for 10 minutes in an electric oven and 25-30 minutes in a coal oven before serving). During this time, brush the fish with lard and scallion oil (add chili powder to increase the spiciness according to the taste of the diners).

7. What to eat with grilled seafood
