How to make Shanghai soup dumplings

1. Wash the pig skin and cut it into small pieces; scrape the front and back of the pig skin clean with a knife; add clean water to the soup pot, boil it and put the pig skin in; blanch it until the pig skin curls up, remove it and drain it; cut it into small pieces; add clean water again, boil it and put the diced skin in;

2. Add cooking wine and salt, stir well; cover and simmer on low heat for 2 hours (or 25 minutes in a pressure cooker); filter out the pork skin cubes from the cooked pork skin soup (because I like pure pork skin jelly, I filtered out the meat residue, but you can skip this step if you don’t mind); pour into a covered container, cool and refrigerate for more than 2 hours; take out the frozen pork skin jelly and turn it upside down; cut into small pieces.

3. Mix all the dough ingredients, knead into a smooth and uniform dough, cover with a wet cloth and let it rest for 20-30 minutes; add pork, eggs, cooking wine and a small amount of ginger slices into a food processor and beat into meat paste; take a large bowl, mix the meat paste with chopped jelly, add soy sauce, salt and cornstarch and mix well; roll the dough into long strips, cut into small pieces, and roll into thin round dough sheets; wrap the meat filling, pleat and wrap into small buns; brush the steamer with oil and evenly place the buns in the steamer; after the water in the pot boils, put the steamer on and steam on high heat for 5 minutes; cut the ginger into shreds, add to Zhenjiang vinegar, and dip the soup dumplings into it after they are steamed.
