Thai seafood vermicelli salad recipe

1. Remove the internal organs and brown skin of the squid, wash it, and cut it diagonally with a knife. Then cut the squid into 4cm long and 2cm wide slices for later use; remove the head and sand line of the shrimp, and then remove the shrimp shell; crack the mussels, remove the internal organs, and peel out the shell meat.

2. Soak the dried vermicelli in warm water for 15 minutes. Wash the celery, remove the leaves and cut into 4cm long segments. Peel the shallots, cut into strips and set aside. Chop shallots, garlic and chili peppers separately

3. Pour an appropriate amount of water into the pot, bring to a boil, add the vermicelli and cook for 3 minutes. When there is no white core, take it out and quickly rinse it with cold water. Drain and place it on a plate. When the water boils again, add the celery segments and blanch for 1 minute, remove from the water and rinse with cold water, then drain and place on top of the vermicelli.

4. Bring the water to a boil again, add the shrimps, squid slices and mussels, and continue to cook for 1 minute after the shrimps and squid slices are rolled up. When cooked, remove from the water and rinse with cold water. Drain and place on the vermicelli, then add shallot shreds and mix well.

5. Put chopped shallot, garlic and chili pepper in another bowl, then add fish sauce, lemon juice and sugar, mix well, and finally pour it on the cooked seafood vermicelli.
