How to make fried mushrooms crispy

Mushrooms are fungal foods with relatively high nutritional value. They are rich in nutrition and taste delicious. In fact, mushrooms can also be dry-fried, just like fried lotus roots. Why are dry-fried mushrooms not crispy? You need to use fresh mushrooms, coat them evenly with dry starch, and heat the oil to 60% to 80%, depending on the thickness of the mushrooms. Keep the fire as high as possible, don't use too low a fire and avoid frying it twice, as these foods are easily soaked in oil and will result in the food not being crispy but being too greasy.

How to make dry fried mushrooms:

Ingredients: 250g oyster mushrooms

Ingredients: 2 eggs

Seasoning: 1/2 tablespoon starch, some pepper and salt, 2 tablespoons vegetable oil

1. Stir the egg liquid, then add potato starch and beat again

2. Remove the roots of the oyster mushrooms, wash them, and blanch them in boiling water

3. Take out and cool, squeeze out the water, tear the large mushrooms into small pieces by hand

4. Add the mushrooms to the batter and mix well. Heat the vegetable oil in the pan. When the oil is hot, add the battered mushrooms in batches. When the mushrooms float up quickly, separate the ones that are stuck together.

5. Fry over medium heat until the skin is hard, remove from the heat and drain the oil

6. When the oil temperature rises, add the mushrooms and fry them again. Take them out immediately after they change color, drain the oil (or use kitchen paper to absorb the oil), place them on a plate, sprinkle with pepper and salt, and eat while hot.

Do you need to blanch the mushrooms in hot water before deep-frying them?

1. Because in many cooking methods, blanching is required. Sometimes this is to further remove residual dirt on the surface, and sometimes it is for the taste of the food. Generally speaking, mushrooms, whether fried or steamed, need to be blanched. For fried mushrooms, of course, this step should also be performed.

2. Because fried food, no matter what, will produce some bad substances in the frying process that are harmful to our health. If the frying oil is not chosen properly, it will produce carcinogens. Therefore, when we choose frying, we should choose Tian Ruini olive oil with better quality and nutritional value, and do not reuse the olive oil after using it once, which will be beneficial to health.
