After the protein on its surface is relatively solidified, use the back of a hand spoon to gently push along the edge of the pot to prevent the meatballs from sticking to the bottom of the pot and damaging their shape.

16. After skimming off the foam, simmer over medium-low heat until the fish balls are just cooked through. Pour into a soup bowl and sprinkle with a little chopped green onion, pepper and sesame oil.
