Lemon-flavored marinated chicken feet

1. Cut each chicken foot into three pieces and clean them.

2.1 Wash the boiled chicken feet with clean water.

3.2 Pour cold water over the chicken feet, add some cooking wine and bring to a boil.

4.1 Add the cleaned chicken feet, bring to a boil and cook for another 5-6 minutes until they can be easily pierced with chopsticks.

5.2 Add water to another pot, add appropriate amount of pepper, star anise, ginger, cinnamon and cooking wine to the water and cook for 3-4 minutes.

6. Take out only the chicken feet and rinse them under running water until there is no oil left. Finally, rinse again with cold boiled water and drain.

7. Put the chicken feet into a Lock & Lock container, sprinkle with a pinch of Sichuan peppercorns, two star anises, a few slices of ginger, two cloves of garlic, and a piece of chili (I used dried chili, but you can also use fresh ones, if you don’t like spicy food).

8. Pour in a proper amount of marinated sauce. If it is too salty, add a proper amount of boiled water, depending on your taste. I use a ratio of marinated sauce to boiled water of 5:1. Add two slices of lemon to enhance the flavor. Cover with a lid and refrigerate for half a day or a day. Turn it over several times during the period and eat it as soon as possible.
