Authentic pepper chicken recipe

Ingredients: 1000g chicken

Accessories: fresh peppercorns, fresh pepper leaves, dried peppercorns, dried chili peppers, grass fruit, star anise, bay leaves, ginger, garlic, salt, sugar, noodle sauce, oil, cooking wine or white wine.

1. Heat the oil in a pan until 70% cooked, add dried peppercorns, dried chili peppers, tsaoko and star anise and sauté until fragrant;

2. Heat the oil to 90%, pour the chicken into the pan and stir-fry (it is best to filter the water after cleaning the chicken, so don't put too much water into the pan);

3. Add ginger and salt and continue to stir-fry over high heat for about 5 minutes until the chicken is tightened;

4. Add appropriate amount of noodle sauce to the oil and stir-fry until fragrant, then stir-fry with the chicken, try to stir-fry evenly;

5. Stir-fry until the original water vapor is almost dry, add cooking wine, sugar, bay leaves, and appropriate amount of water (it is better to cover the chicken), boil over high heat for 5 minutes, then change to medium heat and cook for 20 minutes. When the chicken is done, it is easy to cook;

6. Add garlic, fresh peppercorns and fresh pepper leaves and stir-fry over high heat for about 3 minutes until you can smell the peppercorn aroma and the temperature is half dry.

7. Serve
