How to cook bitter melon and pork

1.1 Wash the bitter gourd, cut it in half, remove the seeds and slice it for later use. Cut the onion, ginger and garlic into pieces, cut the chili pepper into circles, and set aside the Sichuan peppercorns.

2.2 Cut the pork into shreds, add appropriate amount of cooking wine, super fresh soy sauce, starch, white pepper powder and salt and mix well.

3. Heat the pan with cold oil. When the oil is hot, add the shredded pork and stir quickly. Cook for 20-30 seconds until the pork changes color. Remove from the pan and set aside.

4. Leave some oil in the pot, add onion, ginger, garlic, Sichuan pepper and chili pepper after the oil is hot and stir-fry.

5. Add bitter melon and stir-fry quickly until cooked.

6. Add the shredded pork, a spoonful of cooking wine, salt, and a little water and mix well. Turn off the heat, add chicken stock and serve.
