In order to stew fragrant and tender pig's trotters, it doesn't actually take a long time, but it does require a special step! Without further ado, let’s get started!

First rinse the pig's trotter (actually it's the trotter, the top part of the trotter, I'm used to calling it trotter here!), and cut a few cuts on it with a knife to make it easier for the seasoning to enter. Blanching in hot water is an essential step. After blanching, use a knife to scrape off the dirt and hair on the pig skin.

Add enough water to the pot, put in the pig's trotters and cooking wine, bring to a boil over high heat, then simmer over low heat for twenty minutes, remove from the pot and drain.

Next comes the most important special step, frying! Pour cooking oil into the pot, heat it up, then fry the pig's trotters. Make sure to turn them over so that both sides are heated evenly. Fry until the surface is golden brown and then you can remove from the pot.

After taking it out of the pot, put it back into the original soup pot, add beer, soy sauce, and sugar, continue to simmer on low heat, and it will be ready for about half an hour.

The pig's trotters are soft and tender after being taken out of the pot. They melt in your mouth, have an attractive aroma, are fat but not greasy, and are extremely delicious.
