How to make Mapo Tofu Rice

1. Cut the tofu into 2cm cubes, add 1 spoon of salt in water and soak for a while.

3. Chop the onion, ginger and garlic into fine pieces, and chop the fermented black beans and set aside.

4. Heat the olive oil in a pan, add 2 tablespoons of Pixian bean paste, and stir-fry until fragrant and oil is released.

6. Stir-fry until the fermented black beans are fragrant.

7. Add the marinated minced beef and stir-fry until it changes color and is cooked.

8. Add cooking wine, soy sauce and 1 spoon of pepper powder and stir well.

9. Pour a bowl of water, slightly covering the ingredients, and add the soup stock (fresh broth is better)

10. After boiling over high heat, add the drained tofu.

11. After the water boils, cover the pot and simmer over medium heat for 5 minutes.

12. Add a little chicken essence, black pepper and salt to season.

13. Dissolve starch in clean water, pour into the pot to thicken, and cook over high heat until the sauce thickens.

14. Leave a little soup and sprinkle some coriander at the end.

15. Cover the steamed rice and enjoy!
