How to make muddled chicken

1. Clean the three-yellow chicken, remove the chicken butt, cut it in half, and put it in a pot with cold water.

2. Add scallion, ginger and cooking wine and boil, then wash away the blood foam.

3. Put the mixture back into the pot with cold water, add a few slices of ginger, bring to a boil over high heat, then turn to medium heat and cook for 3-5 minutes, then turn off the heat.

4. Cover and soak for 20 minutes

5. Remove from the heat and let cool. (The chicken here is not cooked, but soaked, which makes the chicken taste more tender)

6. While soaking the chicken, start preparing the seasoning: cut the pickled pepper into small circles

7. Chop the pickled ginger into fine pieces

8. Chop the garlic into fine pieces

9. Cut the chives into chopped green onions

10. Use hot oil to stir the pickled ginger and chili to bring out their aroma (the amount of pickled ginger and chili should be based on your own taste)

11. Then add soy sauce, vinegar, sugar, MSG, and finally add pepper powder and pickled pepper oil (the ratio of these two should be 1:2)

12. Remove the bones from the cooled chicken and tear it into small pieces by hand.

13. Pour the seasoning on the shredded chicken, sprinkle with sesame seeds and chives and serve.
