How to make sesame sauce cold noodles

1. Appropriate amounts of high-gluten or medium-gluten flour, salt, dough water, sesame paste, pepper and chili mixed oil, soy sauce, balsamic vinegar, minced garlic, etc., as well as appropriate amounts of shredded cucumber and chopped coriander.

2. First, mix the flour with clean water to make dough.

3. Then put the dough into a larger bowl and add appropriate amount of water.

4. After adding clean water, wash the dough repeatedly with your hands.

5. When the gluten is about to be washed out of the dough, in order to prevent the dough from falling apart, use a piece of clean gauze to wrap the dough, and then continue to wash the dough.

6. After washing out the wheat starch in the flour, take out the gluten and put it in a plate. Use this gluten to make roasted bran. Cover the gluten with plastic wrap and set aside.

7. Let the washed wheat starch slurry stand for a while. Do not move the basin at this time. Let it settle naturally until the water and powder are separated.

8. After the batter water has settled, drain the clean water on the surface.

9. Add a little salt to the remaining starch slurry and mix well.

10. Spread a thin layer of cooking oil on a metal mold plate.

11. Then scoop a spoonful of the stirred wheat starch slurry into the iron plate.

12. Steam in a steamer for one minute until the dough is shaped and bubbles appear, then you can take it out.

13. Peel the dough off the mold and place it on a plate. Apply a layer of oil on the surface of the steamed dough.

14. Then use the batter to make the dough in this way.

15. After steaming all the dough, stack them up, let them cool slightly and then cut them into strips with a knife.

16. Prepare the sauce by adding mashed garlic, chili pepper and pepper oil into sesame paste, then pour in appropriate amount of soy sauce.

17. Finally, add appropriate amount of balsamic vinegar and mix well.

18. Pour the prepared sesame sauce on the cold skin.

19. Top with shredded cucumber and coriander.

20. Mix well before eating.

21. The Northwest Liangpi is ready.
