How to make Cordyceps Flower Coconut Chicken Soup

1. Peel the skin of the old hen (to prevent the soup from being too oily). If you find it troublesome, you can leave the skin on the chicken legs. Blanch them in cold water.

2. Remove the foam and wash the Cordyceps flowers.

3. Put the washed cordyceps flowers, clean and cut coconut meat and red dates in a container and set aside

4. Pour the chicken and the water used to blanch the chicken into the stew pot, add red dates, coconut meat, and cordyceps flowers.

5. Pour in the coconut water. I couldn't put all the ingredients and coconut juice in one big stew pot, so I used another stew pot for one person.

6. Put a piece of wax paper on the stew pot to prevent the soup from evaporating

7. Close the lid

8. Put it in the soup pot and add cold water to about half of the stew pot (the small stew pot is too short, so I use a small bamboo steamer to support it)

9. Put on the big lid, boil the water over high heat, then turn to low heat

10. Slow cook for 2 hours, then add a little salt and enjoy.
