2. Weigh 110g flour and 30g corn starch, mix them together, add 2g baking powder and 1g baking soda;

3. Weigh 50g corn oil and 35-50g extra fine sugar;

4. Add the corn oil, sugar and an egg weighed in the third step to the flour mixed in the second step, stir evenly, and use a spatula to help make a smooth dough (do not knead with your hands, use a spatula to stir from bottom to top);

5. Take a small amount of dough and wrap a peanut in it to make a small round ball;

6. Arrange the wrapped peanut balls on a baking tray (leave a space in the middle of the peanut balls as they will become slightly larger after baking). Put them in a preheated oven, middle layer, 180 degrees, and bake for about 20 minutes until they turn slightly yellow. Remove from the oven and cool before eating.

Notes on making crispy peanuts

You can also fry or deep-fry the peanuts yourself, but roasted peanuts are relatively crispier. The following picture shows the effect of roasted peanuts before and after. There is no obvious difference in appearance, but the roasted peanuts are slightly larger, the color is drier, and there is no oil.

This recipe uses extra fine sugar. You can use powdered sugar or fine sugar. It is best not to use coarse sugar to avoid uneven mixing.

In the fourth step, do not knead the dough with your hands. Use a spatula to stir it from bottom to top to prevent the flour from forming gluten.
