Step one: Knock the person unconscious. Use the back of a knife or a rolling pin to tap the fish head a few times to stun it so it is easier to handle, then place it on a cutting board;

Step 2: Remove the scales, which is divided into several small steps. (1) Use the back of the knife to scrape the scales diagonally towards the fish head. Note that it should be diagonally towards the fish head, otherwise the knife will easily apply force at different depths, causing damage to the fish meat;

(2) For larger scales, we can remove them directly with our hands, which is relatively quick;

(3) The scales on the fins and belly are not easy to find, so scrape them off carefully and then rinse the whole fish with water;

Step 3: Dig out the internal organs. (1) Start from the tail fin at the bottom of the fish and make a cut about 5 mm deep towards the fish's mouth. This fish weighs about 2 kg. If the fish is small, make a shallower cut; if the fish is large, make a deeper cut until the cut touches the internal organs;

(2) Use your hands to remove the internal organs from the tail, so that it is easier to remove the internal organs as a whole, and then rinse them clean;

Step 4: Dig the cheeks. Use your index finger to pick out the gills on both sides;

Step 5: Remove the fishy line. (1) Clean the fish inside and out;

(2) Make a cut on both sides of the fish, at the head and tail;

10(3) Draw out the fishy lines from the front and back sides respectively;

11(4) Remove the remaining fishy smell from the fish head on both sides.
