How to make old duck and bamboo shoot soup

1. Wash the old duck (ask the duck seller to do it for you) and chop it into even-sized pieces

2.1 Boil the duck in boiling water for 3 minutes to remove the blood. Remove from the water and rinse with cold water

3.2 Soak the bamboo shoots in warm water until soft, remove and drain, and cut the ginger into slices

4. Put the old duck into the soup pot (use a casserole), add enough cold water (3 times the amount of the old duck), boil over high heat, remove the foam on the surface of the soup, add ginger slices and dried bamboo shoots

5. Pour cooking wine and simmer on low heat for 3.5 hours

6. Open the lid, add salt to taste, and simmer for another half an hour.
