How to cook snake skin

How to cook snake skin

Snake skin cooking method: roasted chicken liver and snake slices

Material

350 grams of snake slices, 150 grams of chicken liver, 7.5 grams of MSG, 7.5 grams of fine salt, 15 grams of cornstarch, 2.5 grams of minced garlic, 2.5 grams of green onion, 0.05 grams of pepper, 5 grams of ginger flower, 1 egg white, 5 grams of Shaoxing wine, 5 grams of wet hoof powder, 1 kilogram of cooking oil, and 150 grams of oyster sauce.

1. Tear off the belly bones of the water snake, marinate it with 25g of powder for every kilogram of snake meat for about 1 hour, then soak the snake meat in clean water until it turns white, and remove the tendons.

2. Cut the snake slices into pieces about 5 cm long, absorb the moisture with a towel, add 1 egg white (based on 1 pound of snake meat), 7.5 grams each of MSG and salt, 15 grams of cornstarch, and a little cooking oil, mix well and marinate.

3. Bring the chicken liver to a boil, coat with egg powder, fry over medium heat until golden brown, and slice for later use.

4. Soak the snake slices in oil over low heat, then add oil to a wok, add Shaoxing wine, add scallions, minced garlic, and ginger flowers and stir-fry until cooked. Use wet hoof powder to make starch, add the remaining oil, pour into the chicken liver bowl, cover and serve on a plate.

Snake-belly cucumber

Material

3~5 cucumbers, salt

appropriate amount, minced ginger, chili (optional), sesame oil, mirin, black vinegar

1. Cut the cucumber diagonally into about half, but do not cut it off. The thinner the better. Turn it over and cut it again in the same way. Then cut it every 3 cm.

2. Soak in salt water, squeeze out the water, add seasonings, marinate for about 15 minutes and then it is ready to eat.

Salt and Pepper Snake Steak

Material

Main ingredients : Black snake or king cobra

Snake ingredients: 1 handful of star anise, 1 handful of bay leaves, 4 tangerine peels, 6 slices of ginger, 2 scallions, 1 handful of dried red pepper

Accessories: red brine powder, peanut butter, fermented bean curd juice, chili oil, thirteen spices, broth, MSG, pepper and salt, and pressure cooker

1. Chop the snake into pieces, blanch it and pour it into a pressure cooker.

2. Heat oil in a pan, pour in snake ingredients, sauté until fragrant, then add peanut butter, fermented bean curd juice, and chili oil, stir-fry, add appropriate amount of broth (depending on the amount of snake meat), bring to a boil, and add thirteen spices.

3. Cook for a while and pour into the pressure cooker. The soup should cover the snake meat. Add red brine powder (the amount of salt for stir-frying a dish) and cook on high pressure for 7 minutes.

4. After seven minutes of high pressure, take out the pressure cooker after two minutes, release the air, and pick out the snake meat, making sure it is not sticky with snake ingredients.

5. Heat half a pot of oil in a pot. Bring it to a boil over high heat, then simmer over low heat. Drain the snake meat and pour it into the boiling oil, stir-fry it a few times and then remove it.

6. Immediately sprinkle with MSG and pepper salt while shaking.
