1. Wash the rice once and soak it for 30 minutes.

2. Add half a pot of water to the rice pot, bring it to a boil over high heat and then simmer over low heat.

3. Start preparing the seasoning: soak the mushrooms in water, tie the green onions into knots, cut the ginger into slices, wash the chicken breast and remove the tendons, and chop the coriander into fine pieces.

4. Take another pot, add water, onion, ginger, cooking wine and salt and bring to a boil.

5. Add the chicken breast and cook until done, but don't cook it for too long.

6. When the chicken is cooked, take it out and let it cool down completely, then tear it into small shreds.

7. Cut the mushrooms into shreds, put a little oil in the wok and stir-fry the shredded mushrooms until cooked and set aside.

8. After about half an hour, when the rice is cooked, add the shredded chicken, then the shredded mushrooms, and finally add salt.

9. Add some white pepper to taste.

10. Turn off the heat, add coriander and mix well.

11. Remove from heat, and a bowl of steaming mushroom and chicken breast porridge is ready.
