How to make Xinjiang Turpan minced meat pie

1.Put flour on the table. Make a small hole in the middle. Add cold water. Use your hands to knead the dough slowly from the center to the outside.

2. Knead until you get a smooth dough. Cover with plastic wrap and let it rest for 30 minutes.

3. Wash the beef thoroughly. Cut the lean meat and fat of the beef into soybean-sized pieces.

4. Put the lean meat in a bowl and add the marinade (optional). Add appropriate amounts of light soy sauce and dark soy sauce (two types of soy sauce, the former is saltier and the latter is darker in color). Add cooking wine. Add pepper. If the beef you bought is not very tender, you can add some cornstarch and egg white, mix well and marinate for 20 minutes.

5. Heat the pan, add a little oil and put in the diced beef. Fry until the moisture inside is dry and the oil comes out.

6. Add a spoonful of soybean paste. Continue to stir-fry over medium heat until fragrant.

7. Add the marinated lean beef cubes. Stir-fry over medium heat for about 1 minute. Place the fried beef cubes on a plate and let cool.

8. Sprinkle some flour on the table, take a piece of dough that has been proofed and roll it out with a rolling pin. The thickness is about 3 mm.

9.Put the beef sauce just prepared on top. Sprinkle with chopped green onions.

10. Roll up. seal.

11. Flatten. I forgot to take a picture. You should put the seal facing down and flatten it slightly.

12. Put a layer of oil at the bottom of the pan. Add the flattened dough. I found that the dough I made was a little long and couldn’t fit in the pan, so I had to cut it in half with a knife before frying it. Fry until both sides are golden.

13. After cutting into pieces, you can put it on a plate.
