How to make honey bean tarts

1. Egg tart crust: 135g low-gluten flour, 15g high-gluten flour, 20g salad oil, 70ml warm water, 100g margarine flakes Egg tart water: 120ml milk, 80g sugar, 100ml light cream or Sanhua light milk, 5 egg yolks, candied beans

2. Sift the high flour and low flour, add vegetable oil and water and mix.

3. Knead until smooth and not sticky, wrap the dough with plastic wrap and let it relax for 20 minutes.

4. Soften the macaroni at room temperature, put it in a fresh-keeping bag, press and beat it with a rolling pin until it is as thin as 0.5cm. The softness and hardness of the margarine after rolling should be basically the same as the hardness of the dough. stand-by.

5. Roll the kneaded dough into a pancake, about twice the size of a margarine.

6. Place the thinly rolled margarine in the middle and wrap it with the dough like a quilt.

7. Use a rolling pin to gently tap the surface of the dough and roll it out again to a thickness of 0.5 cm.

8. Use a rolling pin to roll the dough thin, continue to fold the quilt and roll it thin, repeat this three times until it is finally rolled out to a thickness of about 1 cm, or thinner.

9. Fold it into a quilt shape, wrap the dough tightly with plastic wrap, and place it in the refrigerator to relax for 20 minutes.

10. Open the relaxed dough outwards, tap it lightly with a rolling pin, roll it into a rectangle again, and then fold it into three.

11. Roll out the dough that has been folded into three pieces and then roll it into a dough sheet.

12. Roll up the dough starting from the longer side.

13. Wrap the rolled dough in plastic wrap and place it in the refrigerator for 30 minutes to relax.

14. While the egg tart crust is relaxing, prepare the egg tart water.

15. After mixing the milk and sugar evenly, add other ingredients and mix well.

16. Apply a thin layer of vegetable oil evenly on the tart mold.

17. Cut the relaxed dough roll into slices with a knife. Dip one side of the dough in flour, then with the floured side facing up, use your two thumbs to press down from the center to the sides to shape it into a tower.

18. Fill the prepared tart crust with egg tart water (fill only 70% to 80% full).

19. Put it in the oven and bake. The baking temperature is about 220 degrees Celsius, and the middle layer is baked for about fifteen minutes.

20. When the time is up, open the oven and continue baking on the upper layer for about 5 minutes.
