How to make original sponge cake

1. Put the eggs in a container (the container must be clean, without oil or water), add 1 teaspoon of salt

2.12 Beat the eggs with a whisk at low speed until they are foamy, then add the granulated sugar.

3.21 Use a whisk at high speed to stir the egg liquid until it becomes thick and the egg batter sticks to the stirring rod and drips slowly.

4. If the flour is too dense, add 1/3 flour and mix it from the bottom of the egg batter. Do not stir in circles to avoid the flour from clumping and affecting the finished cake.

5. Add the remaining 2/3 flour and mix well in the same way. Brush a layer of oil on the 8-inch mold or put oil-absorbing paper on it, pour the batter in, and shake it on the table a few times to squeeze out the air in the batter.

6. Preheat the oven to 180 degrees for 10 minutes and add the batter. 180 degrees, 40 minutes. Take it out and insert chopsticks or bamboo sticks; if there is no batter on the chopsticks (bamboo sticks), the cake is baked.

7. After taking the cake out of the oven, turn it upside down on the cooling rack and remove it from the mold after it cools down.

8. Cut into pieces and start eating. So delicious!
