1. Microwave the butter and milk for 40 seconds until the butter is completely melted. Let it cool slightly and mix with natural yeast, salt, fine sugar and low flour.

2. Mix into a smooth batter (I beat it on low speed for about 2 minutes).

3. Cover with plastic wrap and let stand at room temperature overnight (8-14 hours, adjust the time according to the room temperature). The next morning the batter had expanded a lot.

4. Mix the eggs and baking soda evenly and pour into the expanded batter.

5. Stir well.

6. Apply a layer of butter inside the mold and pour in the batter (3/5 full is enough, the batter has a strong expansion power). Preheat the oven to 180 degrees, middle layer, for about 20 minutes.

7. The most classic way to eat it is with maple syrup. I don’t have it, so I use honey instead. Soft and sweet, very delicious.
