How to make crispy egg yolk mooncake

1. Add lard to the sieved medium-gluten flour and rub it into crumbs with your hands

2. Add water and knead until the surface is smooth, put it in a safety bag and let it stand for 30 minutes.

3. Add the lard in the pastry ingredients to the sifted low flour and knead it by hand

4. Soak the raw salted egg yolk in rice wine for a while, wipe the surface dry,

5. Bake in the oven at 150 degrees Celsius for about 10 minutes. Let it cool and cut it in half.

6. Divide the red bean paste into 25g pieces and wrap half a salted egg yolk in each piece

7. Divide the relaxed oil dough into 18g/piece and the shortbread into 12g/piece.

8. Roll the dough into a round shape and flatten it. Place a portion of the dough on top and wrap it up like a dumpling, with the seam facing upwards.

9. Take a piece of puff pastry and roll it into the shape of a beef tongue

10. Roll it up into a tube from the side next to you, with the end facing upwards, and relax for 15 minutes

11. After relaxing, roll the tube into strips

12. Roll it up again, with the seam facing down, and relax for 20 minutes.

13. After it is relaxed, take a piece with the seal facing up, press down from the middle with your thumb, and bring the four corners together to form a ball.

14. Roll it into a round shape, wrap the fillings in it, fold it up, and place it on the baking tray with the seam facing down.

15. Brush the surface with egg yolk, sprinkle a little sesame seeds, and bake in the middle layer of the oven at 180 degrees Celsius for 30 minutes
