How to make Spanish paella

1. Open the back of the prawns and remove the shrimp thread. Clean the scallop meat. Remove the internal organs and cartilage of the squid. Tear off the red skin and cut into thick strips or small pieces. Rinse the mussels and drain all the processed seafood for later use.

2. Wash and dice onions, bell peppers, and tomatoes, crush garlic into minced garlic, and wash and chop parsley for later use.

3. Heat the broth in another small pot until it is hot but not boiling. Put a little olive oil in a frying pan, sauté onions over medium heat for 3 minutes until transparent, add minced garlic and fry briefly.

4. Add tomatoes, bell peppers and parsley (leave some for serving) and fry for 2 minutes until the tomatoes are juicy and the bell peppers are slightly soft.

5. Add chili powder, rice and saffron and continue to stir-fry for 2 minutes

7. After the alcohol has evaporated, pour in all the broth, making sure the rice is just covered by the broth. Add salt and black pepper to taste. Reduce heat and cook for 15-20 minutes without stirring

8. When there is almost no moisture left, spread all the seafood evenly on the rice and press down gently until it is half buried in the rice.

9. Squeeze lemon juice (about 1/3 of a lemon), sprinkle green beans evenly on top, cover the pot and wait for 5 minutes

10. Open the lid and stir the rice and seafood. Finally, turn to medium-high heat and wait for 3 minutes. After serving, sprinkle with chopped parsley and lemon.
