Spare ribs are a type of meat that people often eat, and they contain more lean meat. So how do you make the cooked ribs delicious?

Prepare ingredients: 800 grams of spare ribs, 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 2 tablespoons of cooking wine, 1.5 teaspoons of salt, 1 teaspoon of chicken essence, 1 teaspoon of unscented powder, appropriate amount of dried chili, 1 segment of green onion, 1 piece of ginger, 2 star anise, and half a tablespoon of peppercorns.

1. Put water and peppercorns in a pot and bring to a boil. Add the ribs and bring to a boil over high heat. Remove the ribs, wash and drain, and set aside.

2. Add oil to the pan, stir-fry onion, ginger and star anise over low heat, then add the pork ribs and stir-fry until slightly yellow, add the dried chilies, and continue stir-frying until the edges of the ribs are browned.

3. Pour cooking wine along the edge of the pot. Stir-fry for a few times, pour in light soy sauce and dark soy sauce along the edge of the pot, add five-spice powder, add water to cover the ribs, and bring to a boil over high heat. After boiling, turn to low heat and simmer for 30 to 50 minutes, adding appropriate amount of salt.

How to choose spare ribs

When buying fresh ribs, you should look for ones that are bright red in color, feel firm to the touch, have a slightly dry or slightly moist surface that is not sticky, quickly recover from being pressed, and have no fishy smell.

Tips for making spare ribs

1. Pork should not be soaked in water for a long time; when cutting fat, you can dip the fat in cold water first, then put it on the chopping board, and sprinkle some cold water while cutting. This way, cutting will save effort, the fat will not slide, and it will not easily stick to the chopping board.

2. Do not wash pork with hot water before cooking, because pork contains a substance called myofibril, which is easily soluble in water above 15 degrees Celsius. If it is soaked in hot water, a lot of nutrients will be lost and the taste will also be poor.

3. Pork should be cooked thoroughly because pork sometimes contains parasites. If it is eaten raw or not fully cooked, hookworms may parasitize in the liver or brain.
