How to make chicken oil pancake

5. Add cold water to the flour and knead it into a uniform dough. Cover it with a wet cloth and let it sit for 20 to 30 minutes. It is softer than dumpling dough, which makes it easier to handle and chewier.

6. Chop the shallots into chopped green onions and set aside;

7. Roll the sugared dough into thin pancakes;

8. Apply a layer of chicken fat evenly;

9. Sprinkle salt, pepper powder and chopped green onion evenly;

10. Roll into long strips;

11. Roll it up from both ends to the middle, into a Ruyi shape, making sure to roll the edges inside;

12. Stack the two "Ruyi" heads together;

13. Flatten it gently and roll it into a thin pancake. Be gentle when rolling it and try to avoid breaking the outer layer of the dough.

14. Heat a frying pan, add the remaining chicken fat, put in the dough, and fry over medium-low heat. If there is too little chicken, you can add some salad oil or something like that;

15. Fry until both sides are golden brown and cooked through;

16. Use a spatula to push inward from the edge of the dough until it becomes loose. If you want it to be more fragrant and crispy, and there is enough chicken oil, sprinkle in an appropriate amount of chicken oil and fry for a while.
