1.1 Make the filling: Add a little cooking wine, salt, light soy sauce, Yipinxian, sweet bean sauce, and thirteen spices to the pork filling and marinate. When pickling, cut the sauerkraut into thin strips and then chop it into small pieces as possible. The amount of green onion and ginger depends on personal taste and should be finely ground. Heat oil in a pan. Sauerkraut absorbs oil so add a little more. Heat the oil and stir-fry the chopped green onion and ginger, then turn to low heat. Pour in the meat filling and fry until cooked. Then add the sauerkraut and turn off the heat after 20 minutes.

2.2 Knead the dough. The noodles must be very soft. When kneading the dough, use warm water and add a few spoons of oil. You don’t need to use your hands to knead the dough. Just use chopsticks to stir it clockwise until it is soft. I forgot to take a picture when I just finished it, so I took a picture of the remaining half, and it is this soft.

3. The dough for making dumplings contains oil so it is not very sticky. Just add more flour when making the dough. You can roll it or press it with your hands, making it thick in the middle and thin around the edges, and then wrap it. I like to eat big fillings, and the dough and soft oil are added to increase the elasticity for adding fillings. Make into small buns.

4. Pour a little oil into the non-stick pan when making the pie, and make sure to fry it on low heat, otherwise the batter will easily form and the filling will be uncooked. Put the buns in the pot and press them into a pancake shape from the middle to the periphery with your hands. Be sure to press a little bit, not too hard. Sour pork is different from leek filling. Because it is nearly cooked meat, it is a bit hard. Be sure to press it gently, otherwise the skin will easily break.

5. Flip the dough over low heat after one or two minutes. Turn it over from the bottom. The dough on top is thin and too soft, and will break if you are not careful. Fry until both sides are golden brown. I usually bake it twice.

6. The finished product is out of the pot!
