Sweet and Sour Poached Egg

Ingredients: 3 eggs, some oil, some salt, some sugar, some white vinegar, some light soy sauce, some chopped green onion

10. Pour the egg liquid into the boiling water.

12. You will see the egg liquid slowly expand and the egg liquid below has taken shape.

13. Use a spatula to slowly push the egg from the edge of the pot. The egg liquid will form lumps in the process of pushing.

14. Stir the eggs until they form uniform chunks, stirring constantly.

15. When the liquid in the eggs is dry, you can remove from the heat.

Boiled Eggs

Ingredients: 3 eggs, some water

3. Put the eggs in a pot and add cold water until the water level is above the eggs.

4. Add some salt.

5. Bring to a boil over high heat for 5 minutes from cold water, then simmer for 3-5 minutes after turning off the heat.

6. Soak the eggs in pure water, then peel and eat.

Tea Eggs

Ingredients: 8 eggs, some soy sauce, some salt, some tea leaves, some star anise

1. Wash the eggs.

2. Put the eggs into the casserole, fill it with water, bring to a boil over medium heat, cook for another 5 minutes, and turn off the heat.

3. When it is warm, pour out the water and crack the egg shells one by one.

4. Return the cracked eggs to the pot, add the salt, soy sauce, star anise and tea leaves, and refill with water.

5. Cover the pot and bring to a boil over medium heat.

6. Turn to low heat and continue cooking until there is only a little bit of juice left. Note: Cook for at least an hour, turning the chicken over several times.

Osmanthus Drunken Egg

Ingredients: 8 eggs, 100g black plum, 100g rock sugar, 400ml aged osmanthus wine, 1 large bowl of water, 1 teaspoon dark soy sauce, 1 teaspoon salt

1. Prepare the ingredients of black plum rock sugar and osmanthus wine

2. First, put the black plums and rock sugar into a large bowl of water and cook for 15 minutes. When the flavor of the black plums is cooked out, add soy sauce. After it cools down, pour in the osmanthus wine.

3. Make a small hole with the big end of the egg, be careful not to break it, boil a pot of water, add 1 teaspoon of salt and then add the egg, cook for 7 minutes, then remove from the water and quickly put it in cold water to cool it down

4. After the eggs have cooled down completely, gently break the outer shells and you can easily peel out the plump white eggs.

5. Soak the peeled eggs in the soaking liquid prepared in step 2 for more than one night. If you are in a hurry to eat, you can also use a fork to poke small holes in the egg whites so that they can absorb the flavor quickly.
