How to distinguish the quality of pork

1. After a healthy pig is slaughtered, its muscles are light red and its fat is white. The muscles of sick pigs that are not bled properly are dark red and capillaries can be seen on the fat. The muscles that have been injected with water are light red and white, and the skin and subcutaneous fat are obviously yellow, so they are not easy to buy and eat.

2. Fresh meat has good elasticity, and the small pits made by pressing with fingers will disappear immediately.

3. The skin of fresh pork is thin and fine, non-sticky and has no odor.

4. There are yellow-white beans the size of rice grains in the muscles. They are rice (bean) pork, which contains parasites and must not be eaten.

5. Look at the butchering wound. For healthy pigs, the incision on the flesh will turn outwards. For sick pigs that are slaughtered urgently or cold-slaughtered after death, the incision on the flesh will not turn outwards.

6. Sow meat has thick skin and coarse meat, deep and large pores, thick and long nipples, rough muscle fiber texture and dirty red color.

Characteristics of good pork

Normal fresh pork: The muscles are shiny, evenly red, and the fat is milky white; the appearance is slightly dry or moist, and not sticky; the fibers are clear and tough, and the depressions in the muscles recover immediately after finger pressure; it has the inherent smell of fresh pork and no peculiar smell.
