How to make authentic Shaanxi oil-splashed noodles (for three people)

1. Put flour, egg white, salt (2g) and water into the bread machine and start a dough kneading program to make a smooth dough.

2. Knead into a smooth dough and cover with plastic wrap and sugar for 20 minutes

3. When blanching the sugar noodles, you can put some salt and oil in the pot and boil the vegetables until they are cooked, then drain the water and set aside

4. Roll the dough evenly into thin slices of 0.5 cm, cut into 2-finger-wide slices, boil water, stretch the noodles longer, cook for two seconds, remove and drain.

7. Bring the oil to a boil, turn off the heat and wait for 5 seconds. Pour the oil over the chopped green onion, garlic and chili powder to bring out the aroma. Add vinegar while it is still hot.
