How to make vegetable kimchi cold noodles

1. Peel and cut pumpkin into pieces

2. While the pumpkin is still hot, mash it into pumpkin puree. [If you use a food processor, the pumpkin puree will be finer]

3. Put the chopped pumpkin into the steamer and steam for 8 minutes. When you pierce it with chopsticks, it is cooked.

4. Slowly add pumpkin puree to the flour.

5. Add flour and salt into the eggs and mix well.

6. Cover with plastic wrap and let it rest for 30 minutes (the dough must be rested to be easier to roll)

7. Knead into a smooth dough.

8. Divide the dough into several doughs of similar size

9. Roll the dough into thin sheets

10. Sprinkle a layer of cornmeal on the dough and fold it. (You need to sprinkle more cornmeal, otherwise it will stick together)

11. Open the cut dough circles and you will see pumpkin noodles.

12. Wash the cucumber, cut it into strips, add appropriate amount of salt, sugar, and sweet vinegar, and marinate until the cucumber becomes wilted.

13. Peel the pears with a peeler. Cut into slices, add 1 tablespoon of sugar, pour in a little water and soak for 30 minutes.

14. As for kimchi, I bought it ready-made and added some sesame oil to enhance the flavor.

15. Everything is ready, so it's time to cook the noodles. Add water to the pot, wait for the water to boil, put the pumpkin noodles in the pot, add a spoonful of salt when cooking to prevent sticking.

16. After the noodles are cooked, take them out and soak them in ice water to cool.

17. Put the pumpkin noodles into another bowl, spread them flat, and pour the pear and cucumber water into the noodles.

18. Finally, spread the pickled cucumbers, pears, kimchi, tomatoes, and boiled eggs on the surface of the noodles. The fruit and vegetable kimchi pumpkin cold noodles are ready.
