1. Soak the fungus in advance, blanch it in boiling water, and cut it into shreds. Cut the tofu skin into shreds and blanch it in boiling water. Dice the chili pepper.

2. Soak all ingredients in salt water and wash them clean. Cut beans into thin sections, tomatoes into small pieces, and carrots into dices.

3. Beat two eggs in a bowl, add oil to the pan, spread them into an omelet, and then cut into small pieces. At the same time, cook noodles in another pot, rinse them twice with cold boiled water, and place them in a bowl for later use.

4. Chop the onion, ginger and garlic into small pieces. Put a spoonful of sweet noodle sauce, a little Lao Gan Ma chili sauce, soy sauce, sugar and salt in a bowl and stir with boiled water. Put oil in the pot, sauté onion, ginger and garlic, add the prepared sauce, then add the ingredients in step one and simmer in boiled water for a while. When the beans become soft, add the ingredients in step 2, add some salt and sugar, and cook for a while. When the pot is boiling, put a spoonful of vinegar in it.

5. Before serving, add minced garlic and chopped green onions.

6. Just make noodles with fresh ingredients.
