1. Prepare all the ingredients (weigh)

2. Use two water-free and oil-free containers to separate the egg whites and egg yolks (do not leave any yolk in the egg whites).

3. Beat the egg whites and cornstarch for a while

4. Beat until there are coarse bubbles and add one third of sugar

5. Beat for a while and then add sugar

6. Beat until there are fine bubbles and add all the sugar (the sugar should be added in three parts)

7. Beat the egg whites until they are sharp (not flowing) (you can use the residual heat from the oven at this time)

8. Add sugar, milk and oil to the egg yolks and beat with a spoon on the smallest setting (do not use a large setting)

9. Sift the low-gluten flour.

10. Stir into batter (without any grains)

11. Add the egg whites into the batter three times and stir with a spoon (stir once and then add again). (Don't make circles.)

12. Stir well, put into cake mold, shake it to release bubbles.

13. Put it in the oven at 120 degrees for 60 minutes. (If you want a shorter time, try 140 degrees for 45 minutes. Mine will crack a little.)

14. The cake is almost baked and not cracked.

15. When the time is up, take it out, shake it vigorously to release hot bubbles, then turn it upside down and let it cool.

16. Perfect demoulding
