How to make cloud bread without a bread machine

1. Weigh all the ingredients, melt the butter over hot water, divide the eggs into two parts, beat one egg for kneading the dough with a mixer, and beat the egg liquid for decoration and put it in another container for later use.

2. Apply a thin layer of olive oil on the container and on your hands. Put flour, egg liquid, dry yeast, salt, sugar, milk powder and water into the container and start kneading the dough with your hands. Knead it for about three minutes until it becomes a relatively uniform dough. The water needs to be added in two batches, add a portion when kneading the dough, and add the other portion when the butter is kneaded until it is almost smooth.

3. Add butter to the dough and continue kneading.

4. Continue kneading the dough for about 20 minutes. If your hands feel sticky during the kneading process, you can add a few drops of olive oil and add the remaining water to the dough until it becomes a smooth dough.

5. Boil water in a steamer to about 40 degrees. When the temperature is not hot, put the dough container on the steamer and cover it with a lid. This will provide the dough with a moist and warm environment so that it can ferment quickly.

6. After hours, the dough has fermented to about twice its original volume.

7. Take out the dough, sprinkle high-gluten flour on the chopping board to prevent sticking, divide the dough into seven equal parts, knead and release the air, and wait for about five minutes.

8. Start kneading the bread into round pieces and place them on a baking tray lined with tin foil.

9. Cover with plastic wrap, put it in the oven, put a bowl of hot water at the bottom, and allow for secondary fermentation for about half an hour.

10. When the volume expands to about 1.5 times the original size of the bread again, remove the plastic wrap, brush a layer of egg liquid evenly on the surface, and then garnish with sesame seeds.

11. Preheat the oven to 200 degrees for five minutes, place the baking tray in the middle layer, and start baking bread at 200 degrees for 13 minutes. Pay attention to observe at all times.

12. Open the oven, take it out, put it on a plate, and eat it while it’s hot!
