Production steps

1. Wash the chicken thighs and cut into pieces for later use.

4. Dice the red pepper and Hangzhou pepper, and chop the onion and ginger and set aside.

5. Heat oil in a pan. When it is 60% hot, add chicken thighs and fry until cooked through. Remove from pan.

6. Leave some oil in the pan, add scallion and ginger when it is 50% hot and stir-fry until fragrant.

7. Add red pepper and Hangzhou pepper, stir-fry over high heat for a few times, then add chicken thighs, stir-fry evenly, and add cooking wine and soy sauce.

8. Add salt, MSG and chicken powder to season, thicken and serve.
