Quinoa purple potato sushi roll recipe

1. Soak quinoa in warm water in advance

2. Add the soaked quinoa into the rice and glutinous rice and mix well.

3. After mixing well, put it into the pot and steam it. The ratio of rice and quinoa is 2 to 1 glutinous rice. After steaming, let it cool to a low temperature, add sushi vinegar and mix well (the method of making sushi vinegar is written below)

4. Put the steamed purple sweet potato into a bowl and stir it into a paste

5. Then pour the rice mixed with sushi vinegar into the purple potato puree and mix evenly.

6. Put the eggs in a bowl, add a few drops of cooking wine to remove the fishy smell, then add a small amount of cooking oil and stir to break up

7. Pour an appropriate amount of cooking oil into the pan, pour in the egg liquid and fry it into an omelet

8. Spread the seaweed sheets and evenly cover the rice, leaving 1 cm on the top.

9. Put the fried omelette on top

10. Then add carrot strips (if you don’t like eating carrots raw, you can blanch them first) and sushi radish (the method of making sushi radish is in my recipe), add more meat floss, and Thousand Island sauce.

11. Put both hands on the sushi curtain and roll it up together. One person was taking the photo, so only one hand was photographed. After rolling to the end, pick up the sushi roll and roll it with both hands.

12. Cut off the head and tail of the rolled sushi roll, cut into small pieces evenly, and place on a plate

13. How to make sushi vinegar: Take a small pot, pour in white rice vinegar, white sugar and salt in a ratio of 6:3:1, boil until the sugar and salt melt, let it cool and set aside

14. The simplest weighing method is to take a container, use this container to take 6 times of white vinegar, 3 times of white sugar, and 1 time of salt and mix them.
