How to make shrimp sushi

1. Mix the stewed and steamed purple sweet potato and pumpkin in a ratio of 1:1. Add one spoon of white vinegar, one spoon of sugar and one spoon of salt to make apple cider vinegar. Add the rice of purple sweet potato and the rice of pumpkin to the sushi wrapper. Place them in strips as shown in the picture. Leave one side 2 cm empty and do not put rice. It will be used for bonding at the end.

2. Wash and cook the shrimps, peel and remove the shrimp thread for later use

3. Add appropriate amount of salt and water to an egg to make a paste and then filter it again. Add a thin layer of oil into the pot and pour in the egg paste to make a thin egg pancake

4. Cut the shrimp into short pieces and place them in a line on the egg skin, then tightly roll up the egg skin to wrap the shrimp.

5. Cut the cucumber and carrot into strips, boil the carrot in boiling water for a short time, put the egg and shrimp rolls first, and place the carrots and cucumbers neatly as shown in the picture.

6. Roll up the sushi curtain, squeeze the sushi roll with proper force to make sure there is no air inside, and cut evenly with some cold boiled water on the knife.
