1. Chop the ribs into smaller pieces. Soak in clean water, change the water twice and wipe dry.

2. Add cooking wine, salt, scallion segments, ginger slices, five-spice powder, cornstarch, light soy sauce and dark soy sauce to the ribs and marinate for more than half an hour. After pickling, remove the scallion segments and ginger slices.

3. Cut the dried red pepper into small pieces; peel and remove the garlic heads; cut the ginger into shreds; set aside the Sichuan peppercorns.

4. Add more oil to the pot and heat it to 50%. Put the ribs in and stir-fry until the water is dry and fry thoroughly. When the ribs turn golden brown, remove from the pot and drain the oil.

5. Leave a little oil in the pot, add shredded ginger and garlic cloves, warm the oil and stir-fry over low heat until the aroma comes out and the garlic turns golden yellow.

6. Put the fried ribs into the pot and stir-fry with garlic and ginger for a while.

7. Push the ribs to one side of the pot. Roast the peppercorns over low heat until fragrant.

8. Add the dried chilies and stir-fry until fragrant. Then stir-fry with the ribs. If you like the ribs to be softer in texture, you can add a little water and simmer for a while.

9. Add sugar, cooking wine, sesame oil, chicken powder and vinegar to season and stir-fry evenly.

10. Sprinkle some cooked white sesame seeds before serving. Let’s eat the hot and spicy spare ribs!
