3. Put it in a bowl, add salt, starch, pepper, oyster sauce, mix well and marinate for 15 minutes

4. Chop the Pixian bean paste, dice the ginger and garlic, cut the green onion into sections, and cut the long pepper into dices.

5. Heat oil in a pan, add Sichuan peppercorns, fry over low heat until fragrant, then remove from the pan and keep aside.

6. Add the marinated duck gizzards, turn to high heat, and stir-fry quickly until the gizzards change color

7. Add a teaspoon of cooking wine, stir quickly and scoop out the gizzards for later use.

8. Add ginger, garlic, and Pixian bean paste to the remaining oil in the pot, and stir-fry over low heat until the oil turns red.

9. Add the chili peppers, turn to high heat, stir-fry for a few times, then add the fried duck gizzards in step 7 and stir well.

10. Finally, add sugar, soy sauce, chicken essence, sesame oil, and green onion, stir well and serve.
