How to make a crispy snack in the afternoon

1. Put all the ingredients for the oil dough into the bread machine bucket, start the dough kneading program, and knead the dough until it expands. Ingredients for the oil dough: 225g medium flour (ordinary flour), 80g lard, 45g powdered sugar, and 90g water. Pastry ingredients: 180g low flour, 90g lard, 5g purple potato puree, 3g green tea powder, mix all ingredients and knead well

2.121 While waiting, divide the kidney bean filling and purple sweet potato puree into 14 portions (35g per portion) and roll them into balls. Divide the remaining kidney bean filling into 10 portions and roll them into balls (25g per portion)

5.2 Take 25g of each kidney bean filling and wrap it with egg yolk

6. Divide the purple and green puff pastry into 4 equal parts, and the original color puff pastry into 8 equal parts. Roll them into balls after they are evenly distributed.

7. Divide the oily skin into 3 equal parts

8.1 Take a piece of dough, flatten it with your palm, and wrap it with a piece of purple dough.

9.2 Divide 2 of the 3 portions of dough into 4 equal parts and roll them into balls. Divide the remaining portion of dough into 8 equal parts and roll them into balls.

10.1 Roll the dough in the above step into a ball, close the top and place it with the bottom facing down, wrap it up and cover it with plastic wrap for later use. Repeat this method to make all the dough. Note: In this step, the larger the volume of the oil pastry, the larger the volume of the oil skin, and vice versa.

11.2 Take a piece of dough, flatten it with your palm, and wrap it with a piece of matcha oil pastry

12. Take one of the doughs and use a rolling pin to roll it into an oval shape (the same operation method for the three colors)

13. Then roll it up from bottom to top. After all the rolls are done, cover with plastic wrap and let it rise for 20 minutes.

14. After all the dough is done, cover it with plastic wrap and let it rise for 20 minutes. Then roll it out again according to the above steps and cover it with plastic wrap and let it rise for 20 minutes.

15. Take one of the purple or green dough rolls and cut it in half with a knife.

16. Take the cut half roll, flatten it with your palm, and then use a rolling pin to roll it out, making it slightly thicker in the middle and thinner on both sides.

17. Turn the rolled dough over and wrap it with the prepared filling.

18. Slowly close the opening, pinch it tightly, with the seal facing downwards

19. Repeat the same process for the remaining purple and green rolls. Unwrap the original color roll and wrap it with stuffing

20. After everything is done, brush the surface of the original egg yolk pastry with egg yolk liquid and sprinkle a little black sesame seeds.

21. Place it in the middle layer of the preheated oven, bake at 160 degrees for about 30 minutes on the upper and middle layers.
