(Because the oil I use is fried in the pan with star anise and peppercorns in advance and then cooled down and then stored, I no longer put star anise alone when cooking) Heat the remaining oil in a hot pan, add dried peppers in the warm oil and simmer until fragrant; turn to high heat, add pork liver and stir-fry until it changes color, add scallion and ginger, stir-fry for a while, add green pepper, add salt and chicken essence to taste and serve. A plate of spicy, crispy and tender pork liver is ready to eat.
