1. Wash, peel and cut fresh lotus roots into thin slices.

2. Blanch in boiling water for 40 seconds, then quickly add white vinegar.

3. After taking out, immediately rinse under cold water, repeat several times until it cools down.

4. Put the lotus root slices into a container, cut the ginger into shreds, and add salt, sugar, chicken essence, white vinegar and peppercorns.

5. Heat the oil in a pan, pour it over the lotus root slices when it is 80% hot and stir evenly.
