1. How to make corn tortillas

Accessories: 1 egg, 2g yeast powder, appropriate amount of sugar, appropriate amount of milk powder, a small bowl of water

1. Put cornmeal and white flour into a bowl, then add yeast, sugar and milk powder and mix together.

2. Beat the eggs and add them into the mixed flour. Then gradually add water (the temperature should not be too high, otherwise the yeast will not be able to ferment) and stir until it becomes a batter. Use a spoon to scoop it up and pour it down. Don't make it too thin, the batter should flow gradually. After the dough is kneaded, it begins to ferment.

3. The dough starts to expand and holes appear. If you like to let the dough ferment, you can let it ferment for a while.

4. Place a non-stick pan (flat bottom) on the fire, wipe the pan dry (do not add oil) and turn to low heat. When the pan is hot, rinse the spoon with clean water to prevent the flour from sticking to the spoon. Scoop a spoonful of fermented cornmeal and pile it into the pot.

5. When the batter is dry and formed, add two spoons of cold water, cover the pot, and fry for 3-4 minutes until the water in the pot is dry and the tortilla bottom becomes crispy. The bottom of the pancake is crispy and the surface is golden. When you cut it open, you'll find sweet corn kernels inside.

1. For the taste, be sure to choose the finest cornmeal. The ratio of cornmeal to white flour can also be adjusted.

2. If you want soft tortillas, don't put oil in the pan. If you like crispy crust, you can put a small amount of oil, but remember to turn it over.

3. If the dough is too fermented, just stir it with a spoon.

4. If the batter is too dry, the tortillas will not be very round, but the taste will still be good.

5. The amount of white sugar and milk powder should be appropriate. White sugar is the medium for yeast fermentation, so you don’t need to put too much. You can also put soy milk powder here, but white sugar is a must.
