How to make fried meat with watermelon rind

1. The minced garlic is half as shown in the picture, the minced green onion is half, and the minced ginger is optional according to personal taste.

2.1Cut off the fat part of the pork. But you have to leave some lean meat, the meat slices will taste better this way. (If you buy lean meat, this step can be skipped.)

3.2 The watermelon rind retains a little bit of red flesh, which makes it look better. After cutting into strips, marinate with salt for 5-10 minutes, drain and set aside.

4.1 Add fat and fry until lard is released, then remove from the pan when it turns golden brown. At this time, there will be a lot of fragrant lard in the pot. If there is too much, you can pour out some of it for other uses. (If you buy lean meat, this step can be skipped.)

5.2 Marinate the lean meat slices with oil, salt and cooking wine for 10 minutes. (Do this at the same time as pickling the watermelon rind to save time)

6.1 Add the marinated meat slices, stir-fry until 70% to 80% cooked, transfer to a plate and set aside.

7.2 Add chopped ginger, onion and garlic and sauté until fragrant.

8. Add the last bit of chopped green onion and garlic, pour the drained watermelon rind into the pot, distribute it evenly so that it is coated with oil. Stir-fry for a while.

9. Pour in the meat slices that have been sautéed with chopped green onions and garlic, add a little light soy sauce for seasoning (the watermelon rind and meat slices are marinated with salt, so there is no need to add salt), and you can add some chicken essence. At this time, pour in a little water starch. Continue to stir-fry for one minute.

10. Serve! The watermelon rind is emerald green with a hint of red, and the flesh is not too tough, it looks very appetizing!
