3. Place the casserole on the stove, preheat over low heat, then turn to high heat to boil; slice the Cantonese sausage and slice or dice the mushrooms into the pot, turn to medium-low heat, cover and simmer until the water is dry; after the rice in the casserole is dry, use a small spoon to scoop a spoonful of oil and pour it evenly and slowly along the edge of the casserole.

4. Cover the lid, turn down the heat, put on heat-insulating baking gloves, lift the casserole and place it over the stove, tilt and rotate it continuously so that the bottom and each side of the casserole can be evenly heated and the oil can cover the gap between the rice and the pot (this is the key to forming the charred rice crust)

5. When the crackling sound in the pot gradually subsides, open the lid and pour the sauce on the rice. The simplest way to make the sauce is to mix 1 spoon of steamed fish soy sauce and 1 teaspoon of pure sesame oil.

6. Wash and chop the shallots and sprinkle them into the pot. Cover and continue to cook on low heat for 3-5 minutes. Turn off the heat and bake for about 10 minutes without opening the lid.
