How to make hand-torn garlic sprouts

1.1 Bring water to a boil, add garlic sprouts and blanch for half a minute. If you blanch the garlic for too long, it will not be as crispy and the color will not look good. Blanching can remove some of the spicy taste of the garlic sprouts, making them taste fresh and refreshing. Raw garlic stalks are very tender. If you tear them directly, they will easily break in the middle. After blanching, the garlic stalks will become a little tougher and can be torn smoothly.

2.2 Remove the old stems from the garlic stalks, break them in the middle, wash them, as they are too long and difficult to tear; chop the garlic cloves into garlic paste and set aside

3.1 Take out and drain the water, start tearing the garlic stalks with your hands. If the garlic stalks are thin, tear one stalk into two strips. If they are thick, tear them into 3 or 4 strips, which will make it easier to marinate.

4.2 Take out the blanched garlic sprouts and soak them in cold water for a while, so that the garlic sprouts will taste crisper

5. Tear all the garlic sprouts into strips

6. Add minced garlic, appropriate amount of salt, chicken essence, soy sauce and aged vinegar

7. Add an appropriate amount of Lao Gan Ma. Since Lao Gan Ma contains chili oil, there is no need to add extra oil. If you like spicy food, you can add more. You can also add other condiments according to your eating habits to adjust the taste you like.

8. Stir evenly with chopsticks, pour into a plate, and serve.
