How to cook braised pork with cowpea

1. Wash and cut the pork belly into pieces. Bring water to a boil and add a little cooking wine. Boil the pork for 2-3 minutes until bloody foam appears. Remove from the water, rinse with warm water, drain and set aside.

2.1 Heat the oil in a pan, add the pork belly and ginger slices and stir-fry over medium-low heat until the meat is oily and the skin is slightly charred and golden.

3.2 Soak the dried cowpeas in advance, wash them, wring them dry and cut them into sections for later use; cut the green onions into sections and slice the ginger for later use

4. Add the crushed rock sugar to the lard in the pot, and fry the sugar color over low heat. When the rock sugar melts and foams in the pot, pour the pork belly, scallion segments, and star anise into the pot and stir-fry quickly. Stir-fry until the meat is evenly coated with sugar color, turn to high heat, spray in cooking wine, add light soy sauce and dark soy sauce, and stir well.

5. Add enough boiling water (broth is better) into the pot at once, and the amount of water should be slightly level with the surface of the meat. Bring to a boil over high heat, then turn to low heat and cover and simmer

6. After simmering for about 1 hour, remove the spices and throw them away, add the cowpea segments, stir-fry the ingredients in the pot evenly, and continue to simmer with the lid on; simmer over low heat until the meat is flavorful and crispy but not mushy (about another 20 minutes), add an appropriate amount of refined salt, turn to high heat to thicken the sauce and remove from the pot. Pay attention to lifting the pot and frying so that the meat is evenly coated with the sauce
