1.1 Soak the salted sprouts in water repeatedly to remove the saltiness and squeeze out the water.

2.2 Wash the pork belly, put it in water, add star anise, cinnamon, pepper, ginger slices, a little cooking wine, cook until 70% cooked and remove from the water.

3.1 Cut the fried pork belly into thin slices and arrange them neatly in a bowl.

4.2 After the cooked pork belly is dried or wiped dry with kitchen paper, apply dark soy sauce on the skin. Put the pork belly in a frying pan and fry the skin until golden brown.

5. Add bean sprouts, green onions and shredded ginger.

6. Add salt, soy sauce, sugar, pepper, thirteen spices and chicken essence.

7. Add chopped pepper and steam in a pressure cooker for twenty minutes.
