How to cook fish stew at home

2. Five small potatoes, 200 grams of beans, cut the potatoes into strips, and break the beans into small pieces.

3. Slice the fish belly diagonally to make it more flavorful, then simmer for 5 minutes and put three cloves of garlic in the fish belly (to remove the fishy smell)

4. Heat oil in a pan, add chili peppers, Sichuan peppercorns, and star anise, fry until fragrant, then add onion, ginger, and garlic.

5. Stir-fry for a while and add appropriate amount of dark soy sauce.

6. Put the fish in the pot and pour a glass of beer on the fish.

7. Then add a teaspoon of rice vinegar, an appropriate amount of chicken essence and fish stew ingredients, and a small amount of salt. (It is not advisable to add salt first when stewing fish. It is better to add salt about 10 minutes before the fish is cooked. Adding a small amount of salt at this time is to make the fish more flavorful.)

8. Then add hot water to cover the fish, and when the water boils, add the chopped potatoes and beans.

9. Knead the dough well and set aside (not too hard).

10. Roll out the dough (make it thinner) and spread it flat on the panel.

11. Add appropriate amount of five-spice powder, salt and oil.

12. Start rolling up from the wide side, about ten centimeters wide. Rolling from the wide side is to make the roll have more layers, preferably more than three layers.

13. Pinch the edges together to prevent oil leakage and to facilitate stretching.

14. Cut the rolled dough into 2 cm wide strips.

15. Stretch the cut strips. Then roll the strips three to four times and pinch the rolled strips together. (This step can be combined with the previous step, and roll up immediately after stretching)

16. After rolling up the paper, keep it for later use.

17. Open the lid and add appropriate amount of salt to season again.

18. Place the rolled dumplings on the beans, cover the pot, wait for fifteen minutes, and cook over high heat until the soup is reduced.

19. Take out the paper rolls first.

20. Then serve the potatoes and beans.

21. Finally, serve the cooked fish.
